Bringing together our best 5 to 6-year-old barrels from our sister distilleries in North Carolina and Kentucky, we batch them, let them get to know each other for 48 hours or so, then re-barrel them in the same barrels for additional aging, usually more than 6 to 8 months. Once we feel the barrels are ready and matured, we batch them one last time before proofing and bottling to 92-proof. It's time-consuming and labor-intensive, but we truly believe it's worth the effort and makes all the difference...we hope you'll agree!
